Chewy Chocolate Chip Cookies

1 ½ cups finely ground almond flour

½ cup butter, softened

1 large egg

½ cup sweetener (we use Swerve Erythritol)

1 tsp baking powder

1 tsp almond or vanilla extract

1 scoop Seva Soul collagen powder

½ cup chocolate chips (we use Lily’s Chocolate Chips)

 

Preheat oven to 350 degrees.

Line a baking sheet with parchment paper.

Combine dry ingredients (almond flour, baking powder, collagen powder, and erythritol) in a bowl.

In a large bowl, combine the melted butter, egg, and vanilla extract and cream together. Mix in the dry ingredients in small batches until well incorporated.

Fold in the chocolate chips into the batter.

Use a cookie scooper or a spoon to scoop out 16 cookies onto the baking sheets.

Bake cookies for 14-15 minutes or until golden brown on top.

Allow cookies to completely cool before devouring!
