Collagen Blueberry Bread

Ingredients

2.5 cups almond flour (we love the Costco brand!)

½ cup erythritol or monkfruit sweetener

Pinch of salt

2 tsp aluminum free baking powder

2 scoops Dr. K Collagen

3 large eggs

1/3 cup butter or coconut oil (we used coconut oil for our recipe)

1/3 cup almond milk or heavy whipping cream

½ tsp vanilla or almond extract

¾ cup blueberries

 

Directions 

Preheat oven to 350 degrees F.

Grease a bread loaf pan with butter or coconut oil.

Combine all the dry ingredients in a bowl and set aside.

Mix together the eggs, sweetener, vanilla or almond extract together.  Add the milk or cream and mix again.*

Combine the wet and dry ingredients together.  Add in the butter or coconut oil and continue mixing.

Bake for 50-55 minutes or until cooked through (use a toothpick to check!)

Let cool completely before devouring!

 

*We recommended using a hand mixer for the best results!
