Double Chocolate Chip Muffins


1 cup almond flour

1/2 cup unsweetened cocoa powder ( we love extra dark!)

1/2 Erythritol or Coconut Sugar

1.5 tsp baking powder

3 eggs

1 tsp vanilla extract (can also use a chocolate extract)

2/3 heavy cream or almond milk

3 ounces butter or coconut oil

1/2 cup chocolate chips (we love Lily's!)

2 scoops Seva Soul collagen powder 

Preheat oven to 350 degrees.

Mix all dry ingredients together (almond flour, cocoa powder, sugar, and baking powder, collagen powder).

In a bowl, cream together eggs, vanilla extract, and heavy cream. Mix in with dry ingredients and add in melted butter or coconut oil. Mix in the chocolate chips and combine well. 

Line muffin tin with silicone molds or liners.  Spray with olive oil to avoid sticking. 

Spoon the mixture into the liners and bake for 20-22 minutes depending on your oven. Once cooked, remove from oven and let cool.

These would be fantastic with some ice cream or whipped cream! Devour!
