Egg Shakshuka With Collagen Powder

4-6 eggs based on your preference

½ scallion minced

2- 3 garlic cloves minced

1 red bell pepper chopped

1 can (15 oz) diced tomatoes

1 tsp tomato paste (optional)

2 scoops Seva Soul (formerly Dr. K) collagen powder

Salt and Pepper to taste

1 tsp cumin powder

1 tsp chili powder (or harissa seasoning)

1 tsp paprika

1 tsp all purpose seasoning

¼ cup cilantro

¼ cup feta 

Using a cast iron skillet, cook shallots and garlic in olive oil over medium heat. Once they are soft and translucent, add in chopped red pepper and collagen powder.  Cook until peppers is soft. 

Add in tomato paste and diced tomatoes and cook until mixture starts to bubble.

Reduce heat and crack the eggs into the sauce.  Cook for another 10-15 minutes or until the eggs are cooked.  Sprinkle feta and cilantro on top. 

Devour!!
