Low Carb Snickerdoodle Cookies

Snickerdoodle Cookies
Cookies
2 cups almond flour (the more fine the better)
½ cup unsalted softened butter
½ tsp baking soda
1 scoop Seva Soul collagen powder (this is what makes it chewy)
Small pinch of salt
½ cup erythritol granulated sweetner (Laktuno or Swerve are great options)
Big pinch of cinnamon
Cinnamon Topping
1 tbsp erythritol granulated sweetener
2 tbsp cinnamon
Combine together in a small bowl
- Preheat oven to 350 degrees
- Mix all ingredients in a bowl until it becomes a stiff ball
- Use a cookie scoop or roll the dough into 12-16 cookies depending on how big or small you want your cookies
- Flatten cookies with you a fork or your fingers
- Sprinkle cinnamon topping on cookies
- Bake for 13-15 minutes depending on your oven Watch it closely as they can burn easily.
- If you have any remainder cinnamon topping, then sprinkle on top of cookies as soon as you take them out of the oven.
- Let cool completely and devour!
