Protein Banana Bread

3 medium ripe bananas (the browner the better!)

1 tsp vanilla extract

1/4 cup peanut butter

1/2 cup coconut flour

1 tsp baking soda

1/2 tsp cinnamon

1/4 tsp salt

2 scoops Seva Soul Collagen Powder

1/2 cup chocolate chips (we used Lily's chips!)

Preheat oven to 350 degrees.  Spray a loaf pan with olive oil cooking spray. 

Mix bananas, vanilla, peanut butter, and eggs.  Combine really well. Mix in coconut flour, cinnamon, salt, and baking soda. You can use an electric mixer to make batter smooth and combined. Once mixed well, mix in chocolate chips.  Pour batter into prepared pan and smooth the top even. Sprinkle a few more chocolate chips on top if desired. 

Bake 30-35 min or until toothpick comes out clean in middle of the loaf.  Cool on wire rack for 30 minutes and then invert bread from the pan. Let cool completely before cutting and enjoying!
