Protein Banana Bread

1/2 cup coconut oil, melted

1 cup monkfruit sweetner (we like the Laktuno brand)

2 large eggs

1/2 cup vanilla greek yogurt

1 1/2 cups oats (can use gluten free)

1/2 tsp cinnamon

1/2 tsp salt

1 tsp vanilla extract

1 tsp baking soda

2 scoops Seva Soul Collagen Powder

3 ripe bananas

Preheat oven to 350 degrees. 

Grease a bread loaf pan preferably 9X5

Mash bananas in a bowl and mix in greek yogurt.

Mix together coconut oil and monkfruit sugar. Add in eggs, vanilla extract, baking soda, and salt.  Mix well.  Add in oat flour and collagen powder. Fold in smashed bananas and greek yogurt mixture. 

Pour into greased bread pan. 

Bake 50-55 minutes.  Use a toothpick to check that banana bread is cooked. 

Remove from oven and let cool for 1 hour before inverting pan and letting it cool completely.
