Protein Chocolate Chip Muffins

2 cups almond flour

1/2 tsp cinnamon

1/4 tsp salt

1/2 tsp baking soda

1 tsp vanilla extract

1/4 cup Monkfruit sugar or erythritol

1/4 cup coconut oil, melted

1/2 Lilly's Chocolate Chips

2 scoops Seva Soul Collagen Powder

Preheat oven to 350 degrees.  Line a muffin tin with liners and spray each liner with cooking spray. 

In a large bowl, mix together almond flour, sugar, salt, cinnamon, and baking soda. Add in eggs, vanilla extract, and coconut oil. Stir in chocolate chips and spoon batter equally into muffin tins. 

Bake 18 minutes or until tops are golden brown. Remove and oven and let cool completely.  Enjoy and devour!
