Protein Pumpkin Donuts

Ingredients:

4 large eggs

1/2 cup pumpkin puree

4 tbsp coconut oil or butter (melted and cooled)

1/3 cup erythritol or monkfruit sweetener

1 teaspoon cinnamon

1 teaspoon pumpkin spice

1 tsp vanilla extract

6 tsp coconut flour

1 tsp baking powder

2 scoops Seva Soul collagen powder

Preheat oven to 350 degrees.  Spray silicone donut pan with olive oil spray. 

Mix eggs, pumpkin puree, butter, sugar, vanilla extract, and spices in a bowl. Whisk in coconut flour slowly until well incorporated and then mix in baking powder. 

Spoon batter into donut molds and bake for 22-24 minutes. Once done, transfer donuts onto a wire rack.  

Feel free to add your favorite glaze or some powdered erythritol and enjoy with a steaming cup of coffee!
