Protein Strawberry Muffins

1 cup fresh strawberries chopped (can use frozen)

3 large eggs room temperature

2.5 cups almond flour

½ cup monkfruit erythritol or sweetener of your choice

1/3 cup almond or cashew milk

1/3 cup melted coconut oil or butter

2 scoops Seva Soul Collagen Powder

2 tsp baking powder

Preheat oven to 350 degrees. Grease a 12 muffin tin pan with olive oil spray.

In a bowl, mix together eggs, milk, and coconut oil. Stir in baking powder and almond flour slowly while stirring gently to avoid any lumps.

Mix in diced strawberries. Pour batter into muffin tins.

Bake 22-24 minutes depending on your oven.

Let cool for 1 hour to allow muffins to set.

Devour!
